Vinification: short cold skin maceration, decantation of the must and subsequent fermentation at 17-18 ° C to maintain the typical aromas of the vines and yeasts. The wine remains in aging on the lees for about 6 months.
Characteristics: The color is pale straw yellow with golden reflections. The scent is floral and reminiscent of yeast and bread crust; the Sauvignon provides intense and floral aromas while the Arneis gives body, minerality and volume. The flavor is rich, savory and fresh.
Suggestions for consumption: It is a very full-bodied white that stands out for its very intense aromas, excellent for grilled seafood, light pasta dishes and robust cheeses. It expresses its best within 5 years of bottling.
